About aloo bhindi 

This Aloo Bhindi recipe is a mildly spiced delicious dry curry made with bhindi(ladyfinger), potatoes, and spices.  North Indian cuisine includes simple and flavorful vegetables.  Alum Bhindi is a simple vegetable but holds a premium position.  This dish is very popular in other regions and states of India. You must have tasted fried bhindi or pickled bhindi at your wedding or your home, but have you ever tasted potato bhindi sabzi? I have made many gravy sabji in my blog but not dry sabzi. To tell you the truth, I prefer gravy sabjis. Aloo Bhindi vegetable is a lightly spiced Indian sabji made using potatoes, bhindi (ladiefinger), and other spices. Along with potatoes, The combination of bhindi is very unique, as one is hard and the other is soft.

Both potato and bhindi are vegetables that adults like bhindi while small children like potatoes, in such a situation if these vegetables are prepared together then the eaters will have fun.  Today I am going to tell you how to make aloo bhindi dry vegetable.  With the help of this recipe of mine, you can easily prepare delicious bhindi potatoes.  These vegetables will prove to be very helpful in making your day or night meal more delicious.

You can also serve this vegetable with roti or paratha, if you believe me, it will be fun if you have millet roti.






1. ladyfinger - 200 gms

2. potato  - 2 (cut into pieces)

3. Onion  - 1  chopped

4. Tomato - 2  chopped

5. ginger paste - 1/2 tsp

6. garlic paste - 1/2 tsp

7. Garam Masala - 1/2 tsp

8. chili powder - 1/2 tsp

9.  Amchur -  1/2 tsp

10. Kasturi Fenugreek - 1/2 tsp

11. oil - 3 tbsp

12. Salt - as per taste 


(1) Heat oil in a pan. Add potatoes and fry till they become crispy. Take out the fried potatoes and remove their oil. Add chopped okra to the same pan and cook until soft.

(2) Cook till Take it out of the pan.

(3) After this, add finely chopped onion and fry till it becomes transparent. Add ginger-garlic paste and cook till the raw smell goes away.

(4) Add chopped tomatoes and add cumin powder, coriander powder, red chili powder, and turmeric powder to it. Fry till the oil separates.

(5) Now add cooked bhindi and potato to the mixture of spices and mix well. Sprinkle garam masala, dried mango powder, and salt, and fry for a minute.

(6) Garnish the vegetable with crushed kasturi methi. The vegetable is ready!
